Beef, oyster mushroom and broccolini stir-fry

Make a quick, colorful beef stir-fry for a delicious and nutritious meal in no time.
Ingredients:
  • 450g pkt hokkien noodles
  • 20.00 ml grated fresh ginger
  • 350g beef fillet steak, sliced thinly
  • 36.40 gm olive oil
  • 1 bunch broccolini, cut into 3 lengths
  • 1 red capsicum, deseeded, sliced
  • 150g oyster mushrooms, halved
  • 60ml oyster sauce
  • 21.00 gm soy sauce
  • 20.00 ml kecap manis (Indonesian sweet soy)
Instructions:
  • Place the hokkien noodles in a heatproof bowl and cover them with boiling water. Let them sit for 5 minutes to separate, then drain.
  • Mix together the ginger, garlic, beef, and 1 1/2 tablespoons of olive oil in a bowl. Heat a wok over medium-high heat. Cook the beef in batches for 1 minute on each side until golden. Transfer to a plate.
  • Pour the remaining oil into the pan, then sauté broccolini and capsicum for 2 minutes. Next, add mushrooms and cook for another minute. Stir in noodles, beef, oyster sauce, soy sauce, and kecap manis. Cook for 3-5 minutes. Serve hot.
