Oyster Stew

Quick and easy oyster stew - ideal for festive Christmas!
Ingredients:
  • 1/4 cup butter or margarine
  • 1 pint shucked oysters, undrained
  • 2 cups milk
  • 1/2 cup half-and-half
  • 1/2 teaspoon salt
  • Dash of pepper
  • Italian parsley sprigs, if desired
  • Red bell pepper strips, if desired
Instructions:
  • In a 1 1/2-quart saucepan, gently melt the butter over low heat. Add the oysters and cook, stirring occasionally, until the edges curl.
  • In a 2-quart saucepan, gently warm the milk and half-and-half over medium-low heat until hot. Add salt, pepper, and oyster mixture, then continue heating until hot. Sprinkle with parsley and bell pepper before serving.
