Oysters on the half shell with habanero-tomato mignonette

Delicious and elegant Christmas dinner starter: oysters on the half shell.
Ingredients:
  • 1 medium tomato, seeded, finely diced (about 1/2 cup)
  • 1 medium shallot, finely diced (1/4 cup)
  • 40.00 ml finely chopped fresh coriander
  • 42.00 gm fresh lime juice
  • 1 habanero chilli (see tip), seeded, very finely chopped
  • Fine sea salt, to taste
  • Rock salt
  • Crushed ice
  • 32 fresh oysters on the half shell, from the deli
Instructions:
  • Prepare the mignonette by gently combining the tomato, shallot, coriander, lime juice, and habanero chili in a small bowl. Season with sea salt to taste and set aside.
  • Present the oysters with the extra mignonette on the side.
  • Before serving, generously sprinkle rock salt over a non-reactive rimmed platter, then layer crushed ice on top. Sprinkle another generous handful of rock salt over the ice to keep it from melting.
  • Place the oysters in their shells on the ice, gently securing them to prevent spills. Drizzle 1 teaspoon of the mignonette over each oyster and serve the rest in a small bowl.
