Elevate oysters with these tantalizing dressing recipes.
Ingredients:
  • 24 fresh natural oysters
  • Rock salt, to serve
  • 2 pancetta slices, finely chopped
  • 40.00 ml finely chopped fresh chives
  • 1 vine-ripened tomato
  • 2 tsp balsamic vinegar
  • 20.00 ml finely shredded basil
  • 1 green shallot, very thinly sliced
  • 21.00 gm light soy sauce
  • 2 tsp black vinegar
  • 5.00 gm caster sugar
  • 1 tsp sesame oil
  • Toasted sesame seeds, to sprinkle
Instructions:
  • 1. Cook pancetta in a small frying pan over medium heat until crisp, about 2-3 minutes. Remove from heat, then distribute evenly over one-third of the oysters. Finish with a drizzle of Worcestershire sauce and a sprinkle of chives.
  • Prepare the tomato dressing by scoring a shallow cross on the base of the tomato, blanching it in boiling water for 10 seconds, transferring it to a bowl of iced water, peeling it, cutting it in half, removing the seeds, and finely chopping it. Mix the tomato with vinegar, oil, and basil in a bowl, then drizzle over half of the oysters.
  • Make the green shallot dressing by mixing green shallot, soy sauce, vinegar, sugar, and oil in a small bowl. Drizzle over the rest of the oysters and sprinkle with sesame seeds.
  • Spread the rock salt on a large serving platter and artfully display the oysters on top for serving.
