Classic and renowned oyster dish with countless variations.
Ingredients:
  • 6 oysters in deep shells, from sustainable sources
  • 500 g rock salt
  • 3 spring onions
  • 1 stick of celery
  • a few sprigs of fresh tarragon
  • 1 small handful of stale breadcrumbs
  • a few drops of Tabasco
  • 1 tablespoon butter at room temperature
Instructions:
  • Prepare the oysters by shucking them and placing each one in the deeper half of its shell. Arrange the shells on a bed of rock salt in a small baking tray. Roughly chop the spring onions and celery before adding them to a food processor along with the tarragon leaves and remaining ingredients. Pulse into a paste, season to taste, and spoon a dollop on top of each oyster. Grill on high heat for approximately 10 minutes or until crispy and golden brown.
