Broiled mahi mahi with oysters Rockefeller toppings, a flavorful main dish. Also delicious with salmon or tuna!
Ingredients:
  • 1 pound bacon
  • 4 (6 ounce) mahi mahi fillets
  • 1 pinch ground black pepper, or to taste
  • 1 tablespoon butter
  • 1 (10 ounce) package frozen chopped spinach, thawed and well drained
  • 6 green onions, chopped
  • 3 cloves garlic, chopped
  • 0.25 cup evaporated milk, plus more as needed
  • 2 dashes hot pepper sauce, or to taste
  • 2 cups shredded Monterey Jack cheese
  • 0.5 cup shredded Parmesan cheese
Instructions:
  • Fry bacon in a big skillet on medium-high heat, flipping occasionally, until perfectly browned, for approximately 10 minutes. Place on a paper towel-covered plate to drain, then chop when it cools down a bit.
  • Sprinkle mahi mahi with flavorful garlic salt and pepper.
  • Preheat a nonstick skillet over medium heat, then cook the mahi mahi until it easily flakes with a fork, for about 10 to 15 minutes.
  • As the mahi mahi cooks, melt butter in a skillet. Add spinach, green onions, and garlic; cook for 2 to 3 minutes until heated. Mix in bacon, evaporated milk, and hot pepper sauce; simmer gently. Gradually stir in Monterey Jack cheese until fully melted, adding more milk if desired for a creamy sauce.
  • Preheat the broiler and position the oven rack 6 inches below the heat source.
  • Place the fillets in a baking dish, spoon the spinach sauce over them evenly, and finish by sprinkling with Parmesan cheese.
  • Broil until the cheese is golden and bubbly, about 3 to 5 minutes in a preheated oven.
