Simple and refreshing tomato toast with garlic, olive oil, and salt. Perfect for a quick and easy summer dish or snack.
Ingredients:
  • 1 loaf ciabatta bread, approximately 1 pound
  • 1/4 cup olive oil, plus more for drizzling
  • 1 to 2 garlic cloves, peeled
  • 2 to 3 (about 2 pounds) large ripe tomatoes, cored and halved crosswise
  • 1/2 teaspoon kosher salt, or to taste
  • Flaky sea salt, for garnish
Instructions:
  • Prepare the ciabatta bread: Slice the loaf in half to make it easier to handle. Cut each half into approximately 1 1/2-inch slices and depending on the size of the loaf, halve the slices to aim for 4-inch long pieces that are easy to pick up and bite into. Place the slices on a baking sheet in a single layer, brush with olive oil, and broil for 2 to 3 minutes until slightly charred and crispy. Cool briefly, then rub the bread with garlic cloves.
  • Grate the tomatoes over a bowl using a box grater, letting the flesh fall into the bowl and discarding the skins. Stir in the salt, taste, and adjust seasoning if needed.
  • To prepare the pan con tomate: Top each slice of bread with approximately 2 tablespoons of the tomato mixture. Drizzle with additional oil, sprinkle with flaky salt, and serve. Enjoy the dish and kindly leave a review!
