Elevate your meal with delicious pan-fried barramundi topped with flavorful pumpkin salsa.
Ingredients:
  • 500g pkt Diced Butternut Pumpkin
  • 5.00 gm smoked paprika
  • 80ml olive oil
  • 120g pkt Baby Spinach
  • 20.00 ml chopped flat-leaf parsley
  • 4 Ocean Barramundi Portions
  • 1 lime, juiced
  • 1 small red onion, thinly sliced
  • Flat-leaf parsley sprigs, to serve
Instructions:
  • 1. Preheat the oven to 220C and line a baking tray with parchment paper. 2. In a medium bowl, coat the pumpkin with paprika and 1 tablespoon of oil. 3. Spread the seasoned pumpkin on the prepared tray and bake for 20 minutes until golden and tender. 4. Once cooked, add the spinach to the tray and mix well to combine.
  • In a large bowl, mix together the garlic, chopped parsley, and 1 tablespoon of oil. Add the barramundi and coat it well.
  • Preheat a large non-stick frying pan over medium heat. Sear barramundi for 3-4 mins on each side until perfectly cooked. Place on a plate, cover, and keep warm.
  • In a small bowl, mix lime juice and the remaining oil. Divide the pumpkin mixture between serving plates with the onion. Place barramundi on top. Season with salt and pepper, then garnish with parsley sprigs. Drizzle with the lime juice mixture and serve with lime wedges.
