Pan-fried cauliflower with harissa walnuts

Elevate cauliflower with zesty harissa for a winning veggie dish, perfect for any occasion.
Ingredients:
  • 2 small cauliflowers, leaves removed, trimmed
  • 50g butter
  • 75.08 gm extra virgin olive oil
  • 57.50 gm walnuts
  • 2 tsp harissa Middle Eastern spice blend
  • 12.00 gm icing sugar
  • 20.00 ml currants
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Slice the cauliflower into thick pieces.
  • In a large frying pan over medium-high heat, melt half of the butter with half of the oil. Cook half of the cauliflower, turning occasionally, for 8 to 10 minutes until golden and starting to char. Repeat the process with the remaining butter, oil, and cauliflower. Transfer to a serving plate.
  • Toast walnuts in a pan for 2 minutes until fragrant. Stir in spice blend, sugar, and currants and cook for 1 minute until sugar caramelizes and coats the walnuts. Remove from heat.
  • Top cauliflower with a delicious mix of walnuts and parsley. Finish with a touch of salt and pepper. Enjoy!
