Green onion sesame flatbreads: Savory dough with green onions and sesame oil, pan-fried to crispy perfection. Dip in hot & sour sauce or your favorite Chinese dip.
Ingredients:
  • 0.25 teaspoon salt
  • 0.75 cup warm water
  • 1 cup all-purpose flour
  • 0.25 teaspoon vegetable oil
  • 0.25 cup all-purpose flour
  • 1 tablespoon vegetable oil
  • 1 tablespoon Asian (toasted) sesame oil, or as needed
  • 0.5 cup finely chopped green onion
  • 1 tablespoon vegetable oil, or as needed
Instructions:
  • In a bowl, dissolve salt in warm water, then add 1 cup of flour to create a soft dough. Transfer the dough onto a floured surface and knead until slightly springy, about 5 minutes. If the dough is sticky, work in 1/4 teaspoon of vegetable oil. Divide the dough into 8 equal pieces and cover them with a cloth.
  • Combine 1/4 cup of flour and 1 tablespoon of vegetable oil in a bowl until it resembles fine crumbs.
  • Roll out the dough on a floured surface into a thin 5x7 inch square. Brush with sesame oil, sprinkle with 1 1/2 teaspoons of the flour-oil mixture, and add 1 tablespoon chopped green onion. Roll into a rope, shape into a spiral, and press lightly to keep it intact.
  • Place the spiral on a floured work surface and gently roll it out into a 5-inch pancake with the onions folded inside, turning it often to prevent holes. Repeat with the remaining dough pieces to make 8 delicious onion pancakes.
  • Preheat a non-stick skillet over medium heat and brush with vegetable oil. Cook each pancake until golden brown on both sides, about 5 minutes each. Slice into wedges and serve hot.
