Whip up crispy Parmesan-crusted eggplant slices for a quick and delicious family meal.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup plain bread crumbs
  • 0.33333334326744 cup Parmesan cheese
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 1 teaspoon garlic powder
  • oil for frying
  • 1 eggplant, cut into 1/8-inch slices
Instructions:
  • Combine flour, bread crumbs, Parmesan cheese, salt, pepper, and garlic powder in a large resealable plastic bag and shake well.
  • Heat oil in a large skillet over medium heat. Dredge a handful of eggplant slices in flour mixture, then fry in the hot oil until crisp and golden brown, about 2-3 minutes per side. Transfer to a plate or cooling rack lined with paper towels. Repeat with remaining eggplant slices.
