Whip up crispy falafel bites in a flash with basic pantry staples - perfect for snacking or appetizers, great alone or with dip.
Ingredients:
  • 1 (16 ounce) can garbanzo beans, drained
  • 1 cup olive oil, divided, or more as needed
  • 0.5 cup panko bread crumbs, divided, or more as needed
  • 0.25 cup chopped white onion
  • 1 egg
  • 2 tablespoons dried parsley
  • 1 tablespoon curry powder
  • 1 tablespoon garlic powder
  • 1 tablespoon lemon juice
  • 0.5 tablespoon ground black pepper
Instructions:
  • Combine garbanzo beans, olive oil, panko bread crumbs, onion, egg, parsley, curry powder, garlic powder, lemon juice, and pepper in a food processor or blender. Pulse until lightly textured, adding more bread crumbs if necessary for desired consistency.
  • Form balls by scooping 1 tablespoon of mixture, rolling in panko bread crumbs, and placing on a plate. Repeat with remaining mixture.
  • In a deep skillet, heat about 1 inch of olive oil over medium heat. Pan-fry the bites until they are crispy and golden brown, about 2 to 3 minutes per side. If needed, work in batches. Then, remove and drain on paper towels.
