Delicious fried trout made by coating whole fish in flour and cornmeal, then frying in olive oil on the stove.
Ingredients:
  • 4 whole (12 ounce) trout, cleaned with tails and heads on
  • 3 tablespoons olive oil
  • 0.5 cup cornmeal
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.125 teaspoon cayenne pepper
  • 2 lemons - cut into wedges, for garnish
Instructions:
  • Discard the gills from the trout. Rinse under cold water and set aside.
  • In a large skillet, warm up some olive oil over medium heat.
  • In a shallow dish, mix flour, cornmeal, salt, black pepper, and cayenne pepper. Then, coat trout in the flour mixture and increase heat to high.
  • Cook the breaded trout in sizzling oil until it easily flakes with a fork, about 4 to 6 minutes per side. Present topped with fresh lemon wedges.
