Family-friendly vegetarian meal ready in 30 minutes.
Ingredients:
  • 1 large avocado
  • 1 lemon, zested, juiced
  • 4 portobello mushrooms, stalks trimmed
  • 4 thyme sprigs, leaves picked
  • 1 long red chilli, seeds removed, finely chopped
  • 28.60 gm honey
  • 40.00 ml apple cider vinegar
  • 250g haloumi, cut into 4 slices
  • 4 burger buns, split, lightly toasted
  • Wild rocket leaves, to serve
  • Mayonnaise, to serve
Instructions:
  • Mash the avocado with a fork, season, drizzle with half of the lemon juice, and set aside for later.
  • In a large frypan over medium heat, heat 1 tablespoon of oil. Add mushrooms, season with pepper, and cook for 6 minutes until slightly softened. Add another 1 tablespoon of oil, garlic, thyme, chilli, lemon zest, and remaining lemon juice. Cook while turning mushrooms for 2 minutes. Drizzle honey, vinegar, and 1/2 teaspoon of salt. Continue cooking and turning for 1 more minute until well coated. Remove from heat.
  • Heat a frypan over medium heat, then add the haloumi and cook for 3 minutes, turning occasionally, until golden.
  • Spread the creamy avocado on the bun bases and layer with grilled haloumi, sautéed mushrooms, a dollop of mayonnaise, fresh rocket, and then place the bun tops.
