Flavorful hoisin-miso marinated sea bass.
Ingredients:
  • 0.25 cup white sugar
  • 1 tablespoon dark corn syrup
  • 1.5 teaspoons soy sauce
  • 0.5 cup sake
  • 0.25 cup hoisin sauce
  • 0.25 cup white miso paste
  • 0.25 cup red miso paste
  • 1.5 teaspoons minced fresh ginger root
  • 1 clove garlic, minced
  • 1 shallot, minced
  • 5 tablespoons canola oil, divided
  • 6 (6 ounce) fillets sea bass
Instructions:
  • Combine sugar, corn syrup, soy sauce, sake, hoisin sauce, white miso, red miso, ginger, garlic, shallot, and 3 tbsp canola oil in a bowl. Mix until well combined. Coat the fillets in the marinade, cover, and refrigerate for 4-6 hours.
  • Preheat the oven to 350°F (175°C) for perfect baking results.
  • Take the fillets out of the marinade, scrape off any extra marinade, and transfer it to a small saucepan. Heat 2 tablespoons of canola oil in a large, heavy cast iron skillet over high heat. Sear the fillets in the hot oil for 1 minute on each side. Then, bake in the oven until the fish easily flakes with a fork, approximately 10 minutes.
  • Once the fish is baking in the oven, heat the leftover marinade over medium-high heat until it simmers. Then, reduce the heat to medium-low and let it simmer for 10 minutes. Serve the sea bass with the miso sauce on the side.
