Pan-toasted salmon & cheese sandwiches

Indulge in effortless salmon and cheese toasties for a delicious seafood treat.
Ingredients:
  • 1 x 210g can red salmon, drained, skin and bones removed, flaked
  • 1 green shallot, ends trimmed, finely chopped
  • 39.60 gm reduced-fat mayonnaise
  • Salt & freshly ground black pepper
  • 4 slices wholegrain bread
  • 4 slices light Jarlsberg cheese
  • 20g baby spinach leaves
  • 10g butter, at room temperature
Instructions:
  • Preheat your oven to 180°C. Line a baking tray with non-stick baking paper. In a bowl, mix together the salmon, green shallot, and mayonnaise. Season with salt and pepper to taste.
  • Lay 2 slices of bread on a clean work surface. Add 1 slice of cheese, followed by spinach leaves, salmon mixture, and the rest of the cheese slices. Finish with the remaining bread on top and gently press down.
  • Butter the outside of the sandwiches. Cook in a non-stick frying pan until golden on each side. Transfer to a tray and bake until cheese melts. Serve the toasted sandwiches cut in half right away.
