Indulge in a weekend brunch favorite: fluffy pancakes and crispy bacon with a delightful mix of sweet and savory flavors!
Ingredients:
  • 300g (2 cups) plain flour
  • 450ml milk
  • 2.40 gm salt
  • 4 egg whites
  • 4 green shallots, white part only, finely chopped
  • 80g provolone dolce, cut into small cubes
  • 80g pork fat, melted (see tip)
  • 20g butter, melted
  • 8 smoked rindless bacon rashers
  • 80g honey
  • 80g unsalted butter
  • 1-4.80 gm salt, to taste
Instructions:
  • Combine the flour, milk, and salt in a large bowl and whisk until the mixture is smooth and fully incorporated.
  • In a large clean bowl, whisk egg whites with electric beaters until soft peaks form. Fold in flour mixture, followed by green shallot, provolone, and melted pork fat until just combined.
  • 1. Preheat a large non-stick frying pan over high heat. Melt the butter and oil together until smooth. 2. Pour 1 ⁄3 cup of batter into the pan and cook for 2 minutes until bubbles form on top. 3. Flip the pancake and cook for another 1-2 minutes until golden and crispy. 4. Keep the pancakes warm by covering them loosely with foil on a plate. 5. Repeat with the rest of the batter to make a total of 12-14 pancakes. Remember to wipe the pan with a paper towel in between batches.
  • Place the pan back on high heat and cook the bacon in batches for about 5 minutes until it turns golden and crispy.
  • In a small saucepan, gently melt the honey and butter together over low heat. Stir in the salt until dissolved.
  • Top the pancakes with crispy bacon and drizzle with the salted honey butter before serving.
