Pancakes with chocolate sauce & Frangelico ice-cream

Decadent pancakes spiked with dark chocolate and Frangelico liqueur, served with creamy ice cream. Sinfully delicious!
Ingredients:
  • 200g (1 1/3 cups) self-raising flour
  • 435ml (1 3/4 cups) milk
  • 1 egg, lightly whisked
  • 60g butter
  • Vanilla ice-cream, to serve
  • 80ml (1/3 cup) Frangelico liqueur
  • 150g dark cooking chocolate, finely chopped
  • 250ml (1 cup) thickened cream
Instructions:
  • Sift the flour into a large bowl, then whisk in the milk and egg until smooth to create a batter.
  • In a large non-stick frying pan over medium-high heat, melt 1 teaspoon of butter until foaming. Pour 80ml (1/3 cup) of pancake batter into the pan and cook for about 1 minute until bubbles form on the surface and the pancake is golden underneath. Flip and cook for another minute until golden. Keep warm by placing on a plate and covering with foil. Repeat with the rest of the butter and batter to make a total of 12 pancakes.
  • To prepare the chocolate sauce, simply combine chocolate and cream in a heatproof bowl set over a saucepan of simmering water (ensuring the bowl doesn't touch the water). Stir with a metal spoon for 3 minutes until smooth (refer to microwave tip if needed).
  • Assemble the pancakes on plates, generously drizzle with chocolate sauce, add a scoop of ice cream, and top with a delicious liqueur drizzle. Serve promptly to enjoy the ultimate dessert experience.
