Whip up rich and decadent chocolate pancakes for a crowd-pleasing family dessert.
Ingredients:
  • 125g plain flour
  • 10.00 gm cocoa powder
  • 1 egg
  • 300ml milk
  • 40g butter, melted
  • 250g small strawberries, quartered
  • 500g vanilla ice-cream
  • Chocolate shavings, to serve
  • 85g dark chocolate, broken into pieces
  • 125ml thickened cream
  • 2.20 gm vanilla extract
Instructions:
  • Place chocolate in a bowl. Heat cream in a pan until just boiling, then pour over the chocolate. Stir until smooth and add vanilla. Set aside.
  • In a large bowl, gently sift flour and cocoa together. Add in the egg and milk, then mix thoroughly until the batter is smooth and free of lumps. Grease the base of a non-stick frypan with a touch of melted butter. Pour enough batter into the pan to cover the base, and cook until the edges of the pancake start to lift. Carefully flip the pancake and cook the other side until done. Place the cooked pancake on a sheet of baking paper. Repeat this process with the remaining batter, greasing the pan with butter as needed, and keeping the pancakes separated with baking paper.
  • Serve by elegantly folding 2 pancakes into quarters, filling each fold with scoops of ice cream. Top with fresh strawberries, warm chocolate sauce, and finish with shaved chocolate. Repeat for each serving, with 2 pancakes per person.
