Savory Russian pancakes topped with endless fillings. Enjoy hot.
Ingredients:
  • 5 eggs
  • 0.5 cup white sugar
  • 1 pinch salt
  • 4 cups milk
  • 2.5 cups flour
  • 6 tablespoons vegetable oil
  • 1 teaspoon vegetable oil, or as needed, divided
Instructions:
  • In a bowl, combine eggs, sugar, and salt, then incorporate milk, flour, and oil until the batter is smooth and thin.
  • Preheat 2 small nonstick skillets over medium heat, then lightly oil them. Pour enough batter into each skillet to cover the bottom, and tilt the pans to spread the batter evenly.
  • Gently lift the blini once the edges turn golden brown, after approximately 2 minutes. Flip and continue cooking until the other side is browned, around 1 minute. Stack the blini on a plate.
