Savory Russian pancakes filled with flavorful beef and onions, perfect for any occasion.
Ingredients:
  • 2 cups milk
  • 1 cup all-purpose flour
  • 3 tablespoons all-purpose flour
  • 2 eggs
  • 1 tablespoon white sugar
  • 0.25 cup melted butter
  • 0.75 pound beef stew meat
  • 2 onions, diced
  • salt and ground black pepper to taste
  • 1 teaspoon vegetable oil
Instructions:
  • In a bowl, combine 1 cup plus 3 tablespoons of flour, milk, eggs, and sugar. Pour in 1/4 cup of melted butter and whisk until smooth. Allow the batter to rest for 15 to 20 minutes before proceeding.
  • Bring water to a boil then cook beef until no longer pink, 5 to 7 minutes. Drain and finely chop the beef until evenly textured.
  • In a skillet over medium-low heat, melt 2 tablespoons of butter until sizzling. Saute the onion until soft and golden, stirring occasionally for about 10 minutes. Turn up the heat to medium and add chopped beef, salt, and pepper. Stir and cook the filling until flavors meld together, approximately 10 minutes.
  • Warm some oil in a nonstick or cast-iron skillet on medium heat. Drop 3 to 4 tablespoons of batter into the skillet and swirl it around to form a thin layer. Let it cook until the edges turn golden for about 1 to 2 minutes. Use a spatula to loosen the blini, flip it, and cook until the other side is lightly browned, about 1 more minute. Repeat with the rest of the batter.
  • Spread a generous amount of savory beef filling onto one side of each delicate blini. Carefully fold the edges over the filling and roll up the blini into a perfectly satisfying bite. Repeat this delightful process with the rest of the filling and blini until you have a delectable batch ready to enjoy.
