Potato blinis with smoked salmon

Irresistible smoked salmon potato blinis, perfect for your next gathering.
Ingredients:
  • 1 large carisma potato, peeled, diced
  • 20.00 gm self-raising flour
  • 30.30 gm thickened cream
  • 40.00 ml snipped chives
  • Cooking oil spray
  • 117.50 gm light sour cream
  • 100g sliced smoked salmon
  • 40.00 ml drained brand baby capers
  • Dill sprigs, to serve
Instructions:
  • Blend the potato, egg, and flour until smooth in a food processor. Transfer the mixture to a bowl, then add the thickened cream and chives, and season generously.
  • Preheat a sturdy frying pan over high heat and lightly coat with oil. Spoon heaping tablespoons of batter into the pan in batches, cooking each side for about 1 minute until beautifully golden and cooked. Remove to a plate.
  • Arrange the blinis with a luxurious layer of sour cream, smoked salmon, tangy capers, and fragrant dill.
