Ingredients:
  • 4 egg whites
  • 250g fine dry breadcrumbs
  • 12 medium potatoes
  • Salt and pepper, to taste
  • Nutmeg, optional, to taste
  • 3-4 egg yolks
  • Oil, for frying
Instructions:
  • Place the 4 egg whites in a deep bowl, then fill another deep bowl with the breadcrumbs.
  • Simmer potatoes in salted water until just tender, being careful not to overcook.
  • Once the potatoes are boiled, seize the moment while the mash is piping hot. Drain the potatoes, then enhance with additional salt (if needed), optional pepper, and optional nutmeg.
  • Mix mashed potatoes with 2 egg yolks, and add an additional yolk as needed to achieve a malleable texture. Ensure the mixture is not too cold or dry to shape the croquettes easily.
  • Roll a 3/4 inch thick sausage on a wooden chopping board and cut into 1 1/2 inch long croquettes.
  • Coat the croquettes thoroughly in egg whites and breadcrumbs, ensuring they are fully covered. Set aside.
  • Roll out one more sausage quickly to prevent the mashed potatoes from cooling down too much.
  • Allow the croquettes to cool and firm up before serving.
  • Fry the croquettes in sizzling 370F/180C oil until they turn a deep golden brown, ensuring you don't overcrowd the pot with more than 5 or 6 croquettes at once.
