Fluffy potato biscuits perfect for any meal using leftover mashed potatoes. Versatile and delicious!
Ingredients:
  • 2 tablespoons baking powder
  • 0.25 cup sugar
  • 0.25 cup butter or margarine
  • 1.5 cups leftover mashed potatoes
  • 1 egg, beaten
  • 0.33333334326744 cup cold water
  • 0.33333334326744 cup milk
  • 2 tablespoons milk, or as needed
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and line a baking sheet with parchment paper.
  • Combine flour, baking powder, salt, and sugar in a medium bowl. Cut in butter until it resembles pea-sized pieces. Add mashed potatoes and mix with a fork. Create a well in the mixture, then pour in egg, water, and milk. Stir until a loose dough forms.
  • Transfer the dough onto a floured surface and knead gently 6-8 times until it comes together. Press the dough to a 3/4 inch thickness and cut out circles using a biscuit cutter or drinking glass. Arrange the biscuits on the baking sheet and brush the tops with 2 tablespoons of milk.
  • Bake until golden on the bottom, around 15-20 minutes in the preheated oven.
