Fluffy sweet potato souffle with a crumbly pecan topping - a Thanksgiving must!
Ingredients:
  • 6 sweet potatoes
  • 0.5 cup milk
  • 0.5 cup melted butter
  • 2 eggs, beaten
  • 1 cup dark brown sugar
  • 0.33333334326744 cup all-purpose flour
  • 0.33333334326744 cup melted butter
  • 1 cup chopped pecans
Instructions:
  • In a large stockpot, generously cover sweet potatoes with water. Boil over medium heat until easily pierced with a fork, around 20 minutes. Drain, cool, and peel off skins.
  • Preheat the oven to 350°F (175°C) and butter a 2-quart casserole dish.
  • In a mixing bowl, combine potatoes and use an electric mixer on low speed until potatoes start to break up. Increase the speed to medium high and blend until smooth.
  • Lower the speed and incorporate sugar, milk, butter, vanilla, eggs, and salt into the mixture until well combined.
  • Leave any potato fibers on the beater and then transfer the sweet potato mixture into the casserole dish.
  • For the topping: Combine brown sugar, flour, butter, and pecans in a small bowl, then sprinkle over the sweet potato mixture.
  • Bake until the soufflé is cooked through in the center, approximately 40 minutes in the preheated oven.
