Prosciutto and marinated fetta blinis

Transform store-bought blinis into quick prosciutto and feta canapés.
Ingredients:
  • 205g packet mini blinis
  • 10 slices prosciutto, halved
  • 180g tub semi-dried tomatoes, drained
  • 320g tub marinated fetta, drained, crumbled
  • Fresh flat-leaf parsley leaves, to serve
Instructions:
  • Cook the blinis according to the instructions on the packet.
  • Place a slice of prosciutto, a slice of tomato, and a crumble of feta on each blini. Sprinkle with a pinch of salt and black pepper. Garnish with fresh parsley before serving.
