Indulge in rich choc-mint pancakes stuffed with chocolatey goodness.
Ingredients:
  • 225g self-raising flour
  • 20.00 gm cocoa powder
  • 40.00 gm caster sugar
  • 1 Free Range Egg, lightly whisked
  • 310ml milk
  • 2 x 35g Nestlé Peppermint Crisp chocolate bars, coarsely chopped
  • 20g butter, melted
  • 6 scoops mint chocolate chip ice-cream
  • 40g Nestlé Aero Peppermint Chocolate bar, coarsely chopped
  • 100g dark chocolate, chopped
  • 160ml thickened cream
Instructions:
  • Preheat the oven to 100C. In a large bowl, sift together the flour, cocoa powder, and sugar. In a separate jug, whisk the egg and milk together. Pour the egg and milk mixture into the flour mixture and stir until combined. Let the batter rest for 15 mins.
  • In a small saucepan over low heat, melt chocolate with cream and sugar, stirring continuously for 3-4 minutes until the sauce is smooth.
  • Stir in half of the chopped Peppermint Crisp bar into the pancake mix until just combined. Heat a large non-stick frying pan over medium-low heat and brush with melted butter. Pour two 1/4 cup (60ml) portions of batter into the pan, leaving space for spreading. Cook for 2 mins until bubbles form on the surface, then flip and cook for another 1-2 mins until golden. Keep warm in the oven on a baking tray loosely covered with foil. Repeat with the rest of the batter to make 12 pancakes.
  • Place a stack of pancakes on each serving plate, add a scoop of ice cream on top. Drizzle with chocolate sauce and sprinkle with pieces of Aero bar and the leftover Peppermint Crisp bar.
