Upgrade your pancakes with zesty citrus syrup. Delicious!
Ingredients:
  • 187.50 gm self-raising flour
  • 2.00 gm baking powder
  • 257.50 gm milk
  • 20g butter, melted, cooled
  • olive oil spray
  • 86.63 gm fresh orange juice
  • 86.63 gm fresh lemon juice
  • 107.50 gm caster sugar
Instructions:
  • In a bowl, sift flour and baking powder together, then add sugar. In a separate jug, whisk egg, milk, and butter until combined. Slowly pour the wet mixture into the dry ingredients, whisking until the batter is smooth. Allow the mixture to rest for 5 minutes.
  • For the syrup: Combine all ingredients in a saucepan. Stir over low heat until sugar dissolves, then raise the heat to high. Boil for 5 minutes or until the syrup thickens slightly.
  • Preheat a small non-stick frying pan over medium heat and lightly coat with oil. Pour 1/4 cup of batter for each pancake into the pan. Cook for about 2 minutes until bubbles form on the surface, then flip and cook for another 30 seconds until done. Transfer to a plate, cover to keep warm, and repeat the process with the remaining batter.
  • Plate the pancakes and generously drizzle with syrup before serving.
