Quick and delicious Turkey and Swiss Panini with sun-dried tomato mayo on dinner rolls.
Ingredients:
  • 4 Sister Schubert's Dinner Yeast Rolls, split
  • 4 slices roast turkey or ham
  • 4 slices Swiss, Monterey Jack, or Gruyere cheese
  • 8 small slices red onion
  • 1 cup fresh spinach leaves or several fresh basil leaves
  • Salt and freshly ground black pepper
  • Butter
  • 0.25 cup mayonnaise
  • 2 finely chopped sundried tomatoes
Instructions:
  • Heat up the grill pan or panini machine over medium heat.
  • Spread a generous tablespoon of creamy mayonnaise on the center of each roll. Layer on the remaining ingredients, excluding the butter, to construct your delicious sandwiches. Don't forget to season with a sprinkle of salt and pepper to enhance the flavors.
  • Brush a light layer of butter on both sides of each roll. Then, grill the sandwiches in a pan or on a panini press until golden brown, about 5 to 7 minutes.
  • Use a pan lid to press down on the sandwich while cooking. Toast each side of the sandwich for 3 to 4 minutes until bread is golden brown.
  • Combine all ingredients in a small bowl and whisk until smooth. Chill in the refrigerator until needed.
