Delicious panini ready in a flash!
Ingredients:
  • 4 slices Italian or Vienna bread
  • 2 tablespoons refrigerated basil pesto
  • 1/4 lb thinly sliced cooked roast beef (from deli)
  • 1/4 cup thin slices roasted red bell peppers (from a jar)
  • 2 slices (3/4 oz each) provolone cheese
  • 1 tablespoons butter or margarine, melted
Instructions:
  • Preheat a closed contact grill for 5 minutes. Spread pesto on one side of each slice of bread. Layer beef, roasted peppers, and cheese on 2 slices of bread, then top with remaining slices of bread with pesto side down. Brush the outsides of the sandwiches with butter.
  • Once the grill is hot, position the sandwiches on the lower grill surface. Close the grill and cook for 3 to 5 minutes until the bread is crispy and the cheese is gooey.
