Elevate salmon with panko-crusted honey mustard coating for a delicious baked dish.
Ingredients:
  • 4 teaspoons extra virgin olive oil
  • 4 pieces thickly cut, boneless salmon (each 6 ounces)
  • Kosher salt and freshly ground pepper to taste
  • 2 tablespoons honey mustard or sweet-hot mustard
  • 2 teaspoons chopped fresh thyme
  • 2/3 cup panko breadcrumbs
  • 2 tablespoons chopped Italian parsley
  • 1/2 teaspoon paprika
Instructions:
  • Preheat your oven to 400°F, whether using convection or regular setting. Place the salmon on a baking sheet lined with foil, skin-side down, and season with salt and pepper.
  • Create the flavorful mustard and panko topping by first mixing honey mustard with 1 teaspoon of thyme in a small bowl. In another bowl, combine panko with the remaining 1 teaspoon of thyme, 4 teaspoons of olive oil, parsley, paprika, and a light sprinkle of salt and pepper.
  • Spread a layer of tangy mustard and crispy panko over the salmon fillet.
  • Roast the salmon at 375°F for 12-14 minutes, checking at 10 minutes, until it's firm and flakes easily. Serve immediately.
