Zesty lime and cilantro-crusted tilapia fillets can be paired with rice, salsa, or in fish tacos.
Ingredients:
  • 1.5 cups all-purpose flour
  • 3 large eggs, beaten
  • 1.5 cups panko bread crumbs
  • 0.25 cup chopped fresh cilantro
  • 1 lime, zested
  • 1 pinch garlic powder, or more to taste
  • 1 pinch cayenne pepper, or more to taste
  • salt and ground black pepper to taste
  • 4 tilapia fillets
  • canola oil, or more as needed
Instructions:
  • Place flour and eggs in two separate dishes. In another dish, mix together bread crumbs, cilantro, lime zest, garlic powder, cayenne pepper, salt, and black pepper.
  • Season the tilapia fillets with a pinch of salt and pepper. Dredge each fillet in flour, ensuring both sides are coated, then gently shake off any excess. Dip the fillets into the beaten eggs, turning them once, and then coat them in the bread crumb mixture. Repeat the process with the remaining fillets.
  • 1. In a large skillet over medium heat, heat oil until shimmering. Add fillets and cook until golden crust forms and fish easily lifts with a spatula, about 3 to 4 minutes. Flip and cook on the other side until fish flakes easily with a fork, additional 3 to 4 minutes.
