Indulge in this unforgettable Italian dessert to complete your meal with style.
Ingredients:
  • 600ml thickened cream
  • 200ml milk
  • 150g caster sugar
  • 1 vanilla bean, split, seeds scraped
  • 3 gold-strength gelatine leaves (see note)
  • 250ml coffee
  • 110g caster sugar
  • 80ml frangelico
Instructions:
  • In a saucepan over low heat, gently mix cream, milk, sugar, vanilla pod, and seeds until sugar dissolves. Heat until just under boiling, then remove from heat and let it sit for 15 minutes to infuse flavors. Meanwhile, soak gelatine leaves in cold water for 5 minutes to soften.
  • Gently warm the cream mixture over low heat. Squeeze out excess liquid from the gelatine, then add to the cream and stir until dissolved. Let it cool slightly, strain, and pour into six 1 cup (250ml) latte glasses. Cover with plastic wrap and chill overnight until set.
  • To make the coffee syrup, gently heat coffee and sugar in a saucepan until sugar dissolves. Let it simmer for 2-3 minutes until slightly thickened. Remove from heat and let it cool. Mix in the liqueur and drizzle over the pannacottas before serving.
