Quick fresh pasta with leeks, white wine, and garlic for a flavorful punch.
Ingredients:
  • 1 x 375g pkt fresh lasagne sheets, cut into thick strips lengthways
  • 60ml (1/4 cup) extra virgin olive oil
  • 1 large leek, pale section only, thickly sliced
  • 1/4 tsp dried chilli flakes
  • 62.50 ml chopped fresh continental parsley
  • 500g white fish fillets (such as ling), coarsely chopped
  • 80ml (1/3 cup) white wine
  • 1 tsp finely grated lemon rind
Instructions:
  • Boil pasta in generously salted water until al dente, about 3 minutes. Drain and return to the pan.
  • While you wait, warm the oil in a spacious skillet over medium-low heat. Saute the leek, garlic, and chili for 2 minutes until tender, stirring occasionally. Mix in the parsley. Turn up the heat to high, then add the fish. Cook for 3 minutes until nearly done, stirring occasionally. Pour in the wine and let it simmer for 1 minute until slightly reduced.
  • Combine the fish mixture and lemon rind with the pasta and mix thoroughly. Serve the pasta in individual bowls.
