Paprika hasselback potatoes

Delicious hasselback potatoes baked with paprika and sprinkled with parmesan cheese - a perfect side dish.
Ingredients:
  • 1kg baby Red Royale potatoes
  • 18.20 gm olive oil
  • 3.75 gm smoked paprika
  • 20.00 ml thyme sprigs
  • 20g parmesan
  • Thyme sprigs, extra, to serve
Instructions:
  • Preheat your oven to 200°C. Slice each potato thinly without cutting all the way through by placing chopsticks alongside and cutting at 3mm intervals.
  • In a bowl, coat the potatoes with oil, paprika, thyme, and season well. Mix everything together. Place them cut-side up in a roasting pan. Roast for 35-40 minutes, turning occasionally, until golden brown and crisp.
  • Transfer the potatoes to a beautiful platter. Generously sprinkle with flavorful parmesan and fragrant thyme. Serve promptly for a delightful experience.
