Parisian potatoes: buttery, round French fry; perfect for a romantic evening.
Ingredients:
  • 2 large russet potatoes, peeled
  • 4 cups water
  • 2 tablespoons kosher salt
  • 2 tablespoons clarified butter
Instructions:
  • Assemble all the ingredients.
  • Use the small end of a Parisian scooper to create 8 or 9 potato balls per large potato. Ensure they are evenly spaced for perfectly shaped balls.
  • Place potato balls in a large bowl of cold water to prevent discoloration. Save potato scraps for another dish like potato pancakes.
  • In a large pot, combine potato balls, water, and kosher salt. Bring to a gentle boil over medium-high heat, then simmer for exactly 2 minutes until the potatoes are firm yet cooked.
  • Remove the potato balls from the heat using a strainer, then allow them to drain on a paper towel-lined plate in a single layer until they reach room temperature.
  • Heat clarified butter in a skillet over medium heat for 2 minutes until glistening. Gently add dry and cooled potatoes to the butter. Cook until golden and crispy on the outside and fluffy on the inside, about 7 to 10 minutes. Stir often for even browning.
  • Serve the dish right away after taking it off the heat.
