Spicy Parmesan Twists: a flavorful snack with a twist.
Ingredients:
  • Melted butter, to grease
  • 300g (2 cups) plain flour
  • Pinch of salt
  • 40g (1/2 cup) finely grated parmesan
  • 160ml (2/3 cup) water
  • 36.40 gm olive oil
  • Plain flour, to dust
  • 1 egg yolk
  • 10.40 gm milk
  • Paprika, to sprinkle
Instructions:
  • Preheat your oven to 190°C. Grease 2 baking trays with butter. Mix flour, salt, and parmesan in a large bowl.
  • Combine water and oil, then use a round-bladed knife to gently mix until the dough just comes together. Shape the dough into a disc, then knead on a lightly floured surface for 5 minutes until smooth. Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.
  • Roll out the pastry to a precise 3mm thickness using a floured rolling pin. Cut the pastry into 1.5cm-wide strips with a sharp knife, then slice the strips into 12cm lengths. Twist the strips gently and arrange them on the prepared trays.
  • Whisk egg yolk and milk in a bowl using a fork. Brush twists with the egg mixture and sprinkle with paprika. Bake in a preheated oven for 15 minutes, swapping trays halfway through, until golden brown. Allow to cool on trays for 30 minutes before serving.
