Get ready to bake a delicious parmesan chicken tray bake for the family to enjoy!
Ingredients:
  • 3 medium Red Royale potatoes, cut into 2cm pieces
  • 1 red onion, cut into wedges
  • 36.40 gm olive oil
  • 100g green beans, trimmed
  • 1 bunch asparagus, woody ends trimmed
  • 250g vine-ripened cherry tomatoes
  • 35g plain flour
  • 1 Free Range Egg, lightly whisked
  • 80g parmesan
  • 600g Australian Chicken Tenderloins
  • Perfect Italiano Parmesan, extra, shaved from a block, to serve
  • Flat-leaf parsley leaves, to serve
Instructions:
  • Preheat oven to 200°C. Line 2 large baking trays with baking paper. Spread potato and onion on one tray, drizzle with half the oil, and season. Bake for 30 minutes. Add beans, asparagus, and tomatoes to the same tray, drizzle with remaining oil, and bake for another 15 minutes until vegetables are tender.
  • Prepare a breading station with three shallow bowls: one with flour, one with beaten egg, and one with grated parmesan. Fully coat each chicken piece in flour, shake off any excess, dip in egg, then generously coat with parmesan. Arrange the coated chicken on a lined tray, spray with olive oil, and bake for 25-30 mins until fully cooked.
  • Garnish the chicken and vegetables with delicate shavings of Parmesan cheese and fresh parsley.
