Easily make delicious creamy polenta with rich chicken stock and Parmesan for amazing flavor.
Ingredients:
  • 1L (4 cups) chicken style liquid stock
  • 750ml (3 cups) skim milk
  • 340g (2 cups) instant polenta (cornmeal)
  • 40g (1/2 cup) shredded parmesan
Instructions:
  • In a large saucepan, combine the stock and milk. Bring to a boil over high heat. Slowly pour in the polenta in a steady stream while stirring continuously until fully incorporated.
  • Lower the heat to medium-low and stir frequently as the polenta cooks for 5 minutes, or until it is soft and creamy. Let it rest for 2 minutes to slightly thicken before stirring in the parmesan, seasoning with pepper, and serving.
