Grilled parmesan polenta

Delicious and simple polenta side dish.
Ingredients:
  • Olive oil cooking spray
  • 515.00 gm reduced-fat milk
  • 510.00 gm chicken style liquid stock
  • 150.00 gm instant polenta
  • 125.00 ml grated parmesan cheese
Instructions:
  • Coat a 4cm deep, 16cm x 24cm heatproof dish with oil spray.
  • In a saucepan over medium heat, bring milk and stock to a boil. Gradually add polenta while whisking continuously. Cook and stir for 5 minutes until thickened. Season with salt and pepper, then mix in Parmesan. Transfer mixture to a dish, smooth the surface, and chill in the refrigerator for 3 hours until set.
  • Preheat the barbecue grill to medium-high heat. Remove the polenta from the pan and slice into 1cm-thick pieces. Lightly spray with oil and grill for 2 minutes on each side or until golden brown. Serve the warm polenta slices.
