Veggie and Parmesan one-pot pasta dinner ready in 25 minutes!
Ingredients:
  • 1/2 package (16-ounce size) farfalle (bow tie) pasta
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped (1/4 cup)
  • 1 clove garlic, finely chopped
  • 1 medium zucchini or yellow summer squash, sliced (2 cups)
  • 1 can (14 1/2 ounces) Italian-style stewed tomatoes, undrained
  • 2 tablespoons chopped fresh or 1 teaspoon dried basil leaves
  • 1/3 cup plus 2 tablespoons finely shredded Parmesan cheese
Instructions:
  • Prepare pasta according to package instructions, then drain.
  • As pasta boils, heat oil in a 12-inch skillet over high heat. Quickly stir-fry onion and garlic for 1 minute, then toss in zucchini and stir-fry for another minute.
  • Combine the tomatoes and fragrant basil into the mixture. Bring to a boil, then lower the heat to medium. Cook for approximately 2 minutes, stirring occasionally, until the vegetables reach the desired crisp-tenderness.
  • Add 1/3 cup of the cheese to the mixture and stir until it's well combined and hot. Serve the dish over pasta and sprinkle with the remaining 2 tablespoons of cheese before enjoying.
