Irresistible roasted Brussels sprouts that will win over even the pickiest eaters. Perfect for snacking or as a hearty vegetarian meal with quinoa or bulgur wheat.
Ingredients:
  • 1 kg Brussels sprouts
  • 2 tablespoons extra virgin olive oil
  • 1 lemon
  • 1 teaspoon chilli flakes
  • 4 tablespoons freshly grated Parmesan or vegetarian hard cheese
Instructions:
  • Preheat the oven to 220ºC/gas 7. Trim and halve the brussels sprouts and spread them on a large baking tray. Drizzle with oil, sprinkle lemon zest, chilli flakes, sea salt, and black pepper. Toss gently with hands to coat evenly. Roast for 10 minutes until they start to caramelize. Sprinkle with Parmesan and roast for an additional 15 minutes until cheese is crispy and sprouts are tender.
