Cheesy baked potatoes and onions with a crispy topping make the perfect side dish.
Ingredients:
  • 4 pounds russet potatoes, cut into 1/4-inch slices
  • 6 tablespoons butter
  • 6 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 1 cup heavy whipping cream
  • 2.5 cups shredded mild Cheddar cheese
  • 1 cup shredded Asiago cheese
  • 1 sweet onion, sliced into rings
  • 0.75 cup sliced green onions
  • 0.33333334326744 cup shaved Parmesan cheese
  • 7 buttery round crackers (such as Ritz®), crushed
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a large pot, submerge potatoes in water, season with salt, and bring to a boil. Lower the heat to medium-low and gently simmer until slightly tender, about 15 to 20 minutes. Drain the potatoes.
  • In a saucepan over medium heat, melt butter and whisk in flour until thickened, 1 to 2 minutes. Stir in milk and heavy cream until smooth, 2 to 3 minutes. Add Cheddar and Asiago cheese, stirring until melted and creamy, 1 to 2 minutes. Season with salt and pepper.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and grease a 9x13-inch casserole dish with butter.
  • Create a dreamy potato layer at the base of the dish. Add a charming mix of sweet onion slices and vibrant green onions, then generously pour a third of the luscious cheese sauce over them. Layer the remaining potatoes gracefully and top with the rest of the cheese sauce. Finish with a sprinkle of Parmesan cheese and crushed crackers for an irresistible topping.
  • Bake in the hot oven until bubbling in the center and edges are golden brown, approximately 30 minutes. Garnish with fresh parsley before serving.
