Parmesan-crusted roast potatoes

Elevate your Christmas feast with a modern take on classic roast potatoes.
Ingredients:
  • 1kg King Edward or other floury potatoes, peeled, chopped
  • 125ml olive oil
  • 80g parmesan
  • 40g semolina
  • 10-12 thyme sprigs
Instructions:
  • Preheat your oven to 190°C for perfect cooking temperature.
  • Add potato to a pot of cold, salted water over medium heat. Allow it to simmer for 10-12 minutes until almost tender. Drain and vigorously shake in the pot over medium heat to dry out and create a crispy texture.
  • In a shallow roasting pan, drizzle 1/4 cup (60ml) of oil and place it in the oven to heat up.
  • In a bowl, mix parmesan and semolina, season, and set aside. Toss potato in remaining 1/4 cup (60ml) oil, then coat with parmesan mixture. Carefully take out pan from the oven, place potato in the hot oil. Sprinkle with thyme and roast for 25-35 minutes, turning once, until golden and crisp.
