Crispy Parmesan roasted cabbage wedges - a delicious combo of sweet caramelization and savory umami. Simple and tasty vegetable side dish.
Ingredients:
  • 3 ounces Parmesan cheese, shredded (about 3/4 cup)
  • 3 tablespoons olive oil
  • 1 tablespoon dried Italian seasoning blend
  • 2 teaspoons garlic powder
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon paprika
  • 1 small (2 pound) head cabbage, cut into 8 (1 1/2-inch) wedges
Instructions:
  • Collect all your ingredients and preheat the oven to 450 degrees F (230 degrees C), positioning the racks in the top third and lower third positions. Line 2 large baking sheets with parchment paper.
  • Mix Parmesan cheese, oil, Italian seasoning, garlic powder, salt, and paprika in a small bowl until the cheese is thoroughly coated in the oil mixture.
  • Spread a generous amount of the Parmesan mixture on one side of each cabbage wedge (approximately 2 tablespoons per wedge) and place them on the baking sheets with the cheese side facing down.
  • Bake in the preheated oven for 16 to 18 minutes, rotating pans midway, until the cabbage is tender-crisp and the Parmesan forms a golden brown crust on the bottom.
  • After baking the cabbage, allow it to rest for 2 minutes, then carefully use a spatula to lift the wedges off the baking sheets. Flip the cabbage wedges, cheese side up, and bake at 450°F (230°C) until tender, for 6 to 8 minutes. Serve while hot.
