Indulge in the best of both worlds with a savory and comforting cheesy parmigiana meatloaf. Costing only $3.15 per serving, it's a delicious and affordable dinner option.
Ingredients:
  • 750g pork and veal mince
  • 1 zucchini, grated
  • 1 egg, lightly beaten
  • 22.20 gm tomato paste
  • 12.20 gm Worcestershire sauce
  • 1 tsp dried Italian herbs
  • 1 small brown onion, finely chopped
  • 250.00 ml panko breadcrumbs
  • 550.00 gm tomato pasta sauce
  • 62.50 ml shredded fresh basil leaves, plus extra small basil leaves to serve
  • 187.50 ml grated pizza cheese
  • 300g green beans, steamed to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and generously grease a 2-litre (8-cup-capacity) oval metal baking dish.
  • Combine mince, zucchini, egg, tomato paste, Worcestershire sauce, dried herbs, half of the onion, garlic, and most of the breadcrumbs in a large bowl. Season with salt and pepper, then mix thoroughly. Press the mixture into a prepared dish and bake until the top is lightly browned, about 20 minutes.
  • In a bowl, mix together pasta sauce, fresh basil, and the rest of the onion and garlic. Season generously with salt and pepper.
  • Take the meatloaf out of the oven, gently remove any extra fat from the dish, spread the tomato mixture over the meatloaf, top with cheese and the rest of the breadcrumbs. Bake for 25-30 minutes until golden and fully cooked.
  • Garnish meatloaf generously with fresh basil leaves before serving alongside beans.
