Indulge in cheesy parsnip chips topped with avocado, tomato, and fresh coriander for a delicious way to enjoy seasonal veggies.
Ingredients:
  • 6 parsnips, peeled, ends trimmed, cut into wedges
  • 18.20 gm olive oil
  • 1.25 gm ground paprika
  • 1/2 tsp dried oregano
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp chilli powder
  • 100g pizza cheese
  • 1 ripe avocado, peeled, seeded, finely chopped
  • 1 roma tomato, finely chopped
  • 62.50 ml coriander leaves, to serve
  • Lime cheeks, to serve
Instructions:
  • Preheat your oven to 200C and prepare a baking tray with baking paper.
  • In a large bowl, coat the parsnip with olive oil and seasonings until well combined. Spread the seasoned parsnip in a single layer on a baking tray. Bake at 400°F, flipping halfway through, for 30 minutes until golden brown and tender.
  • Evenly distribute the cheese on top. Continue baking for an additional 5 minutes or until the cheese is fully melted.
  • Transfer the mixture of avocado, tomato, and coriander to the chips on a serving platter. Garnish with lime cheeks and serve.
