Whip up a zesty Lemon Drop Martini Chex® mix for a quick and tasty snack to share with friends.
Ingredients:
  • 8 cups Rice Chex™ cereal
  • 1/4 cup orange-flavored liqueur
  • 1/4 cup corn syrup
  • 1 tablespoon lemon-flavored vodka
  • 2 packages (2.5 oz each) lemon drop candies, coarsely crushed
  • 8 maraschino cherries
Instructions:
  • Place the cereal in a large microwave-safe bowl.
  • In a 4-cup microwavable measuring cup, heat liqueur, corn syrup, and vodka in the microwave on High for 1 to 1 1/2 minutes until it boils and thickens. Pour this mixture over the cereal and toss to coat. Microwave on High for 3 to 4 minutes, stirring every minute, until the cereal turns light golden brown.
  • Allow mixture to cool slightly before gently folding in the crushed candy. Spread the mixture onto waxed paper and let it cool completely. When ready to serve, scoop the mixture into small martini glasses and garnish each with a cherry on top.
