Passionfruit, peach and orange jam

Create a year-round delight with this zesty passionfruit, peach, and orange jam.
Ingredients:
  • 2 oranges
  • 2 lemons, juiced
  • 2kg peaches
  • 1kg caster sugar
  • 6 passionfruit, pulp removed
Instructions:
  • 1. Score a cross into the base of each peach using a small knife. 2. Boil the peaches in 4 batches in a saucepan for 1 minute until the skins loosen. 3. Plunge the peaches into cold water, peel them, then halve and remove the stones.
  • Cut peach halves into thirds and place them in a bowl. Sprinkle sugar over the peaches, grate fresh orange zest on top, peel and segment oranges, and add the segments to the bowl with the peaches. Squeeze the juice from the orange membranes over the mixture and add the lemon juice.
  • Blend passionfruit pulp in a food processor for 1 minute to release the juice. Strain the mixture through a fine sieve over the peaches, pressing down with a spoon to get all the juice out.
  • Coat fruit in sugar and set aside, stirring occasionally to dissolve sugar, for 2 hours to macerate.
  • Chill 3 saucers in the freezer. Strain the liquid from the fruit into a large saucepan, boil over high heat to dissolve sugar, then simmer for 5 minutes. Stir in the peaches and remaining liquid, continue boiling for 25 minutes until it reaches the setting point.
  • Allow the jam to cool for 15 minutes, then evenly distribute it into the warm sterilized jars and seal them while they are still hot.
