Peach and passionfruit pavlova roll

Australian favorite Pavlova: Delicious and vibrant.
Ingredients:
  • 161.25 gm caster sugar
  • 4 eggwhites
  • 125.00 ml flaked almonds
  • 300ml thickened cream
  • 12.00 gm icing sugar mixture
  • 400g tub sliced peaches in juice, drained, chopped
  • 2 passionfruit, halved icing sugar, to serve
Instructions:
  • Start by preheating your oven to 180°C/160°C fan-forced. Grease a 25cm x 30cm Swiss roll pan and line it with baking paper, leaving a 2cm overhang on all sides. Next, lay a sheet of baking paper on a flat surface and sprinkle 1 tablespoon of caster sugar on top.
  • With an electric mixer, whip egg whites until stiff peaks form, then incorporate the rest of the caster sugar. Beat for 10 minutes until the sugar dissolves. Spread the mixture on the prepared pan, smooth the top, sprinkle with almonds, and bake for 10 minutes until the top begins to brown slightly.
  • In an electric mixer, whip cream and icing sugar until stiff peaks form. Then, pat peaches dry with paper towel.
  • **New and Improved:** Gently transfer the meringue onto the lined baking paper and remove the lining. Allow it to cool for half an hour. Evenly spread the delicious cream mixture over the meringue, then layer with peaches and passionfruit pulp. Carefully roll the meringue from one side to fully enclose the delightful filling. Place it on a plate and let it chill in the fridge for an hour. Serve the delightful dessert with a dusting of icing sugar.
